Bitonto pressed its fame from olives and gave opera a reformer. The Apulian city sits in a silver sea of groves — its oil, the celebrated "gold of Bitonto", has named the town among Italy's olive capitals for centuries, mills and cooperatives still working the harvest at the old town's edge — and at its heart stands one of the masterpieces of Apulian Romanesque: the cathedral of San Valentino, whose sculpted portal, griffin-guarded ambo signed by the master Nicolaus, and excavated lower basilica with its mosaic griffin compose a complete lesson in the region's medieval genius.
The musical son is Tommaso Traetta, born here in 1727: the composer who, at Parma and St Petersburg, loosened opera seria's formulas — bringing chorus, drama and orchestra into new balance a generation before Gluck's reforms claimed the glory — and whose rediscovered scores now anchor the Traetta Festival, the city performing its own prophet. The old town rewards the wandering that follows: Renaissance palaces and courtyards, the Angevin tower, the obelisk remembering the 1734 battle of Bitonto that sealed Bourbon Naples' rise, and the Galleria Devanna's surprising picture collection.
Around, the groves run toward Bari's coast and the Murgia's stone. Oil in the presses, a griffin in the crypt, reform in the repertoire: Bitonto's harvests keep their quality.
