Valencia burns its art on schedule. Each March the Fallas fill the city with hundreds of monumental satirical sculptures — months of ninot craftsmanship planted on the street corners, mascletàs detonating at two o'clock sharp, and on the final night the cremà: everything burns, by design, UNESCO-listed pyromania as civic renewal, the year's art reduced to embers so next year's can begin. The city's permanent collection compensates: the Lonja de la Seda, the silk merchants' twisted-column Gothic hall, UNESCO-listed in stone; the cathedral, whose chapel guards the chalice most seriously proposed as the Holy Grail; and the Turia's diverted riverbed, now a garden running through the city to Calatrava's City of Arts and Sciences — the white skeletal opera house of the Palau de les Arts among its pools, science museum and hemisferic eye beside it.

Paella is native soil — the Albufera's rice paddies at the city's edge grew the dish the world borrowed, and Valencians police its orthodoxy — while horchata cools the afternoons. The concert record documents the Teatro Olympia, the grand 1915 house on the central artery, a century of touring opera, zarzuela, concerts and drama under its eclectic facade — the working stage of the city's theatrical mainstream beside the Palau's newer splendour. Silk, fire, rice and a grail: Valencia keeps combustion and preservation in exact civic balance.
