Gifhorn collects the world's mills. On the town's edge, the International Wind- and Watermill Museum assembles full-size originals and replicas from many nations across a lakeside park — Dutch smock mills, a Ukrainian post mill, Mediterranean tower mills turning their sails over Lower Saxon meadows — and beside them, astonishingly, a complete Russian Orthodox wooden church, built by craftsmen in the old manner, its onion domes and bells serving a genuine congregation: a corner of Novgorod between the heath and the Aller.
The old town matches the charm with local substance: Schloss Gifhorn, the Welf dukes' moated Renaissance castle with its stout bastions and chapel, holds the district museum; the Kavalierhaus and half-timbered Torstraße keep the salt-road trading past legible — Gifhorn grew where the routes from Lüneburg's salt and Brunswick's markets crossed the Ise and Aller — and the market's gables have survived into a lively commercial present.
The neighbourhood explains the modern prosperity: Wolfsburg's Volkswagen city works a quarter-hour away, and Gifhorn serves as its greener residential counterweight, with the Südheide's pine-and-heather quiet beginning at the northern town limits — canoe waters on the Ise, heath trails toward Müden, deer at dusk. Mills from everywhere, a castle from the dukes, wages from the assembly line: Gifhorn grinds its blessings finely.
