Bitburg's name is an order at every German bar. "Bitte ein Bit" — the country's most famous beer slogan — belongs to the Bitburger brewery, the family enterprise that grew from an 1817 village brewhouse into one of Germany's great pils names, its draught taps uncounted across the republic; the brewery still dominates its hometown with visitor centre and civic pride, and the Eifel town's water, the brewers insist, was always the secret.
The town is far older than its lager: Roman Beda gave the name, a way-station on the great road from Trier to Cologne, and the medieval town wall traces exactly the oval of the late-Roman fort — walk the ring and you walk Rome's outline, with excavated gate foundations and the archaeological trail making the fourth century legible under the shopping streets. War flattened much of Bitburg in 1944; the rebuilt centre is practical, with the Liebfrauenkirche's spire and the Bedaplatz fountains as landmarks.
The American decades added an accent — the nearby air bases wove transatlantic families into Eifel life for generations — while the countryside keeps the region's calm currency: the Bitburger Land's plateaus of wheat and cattle, the Prüm and Nims valleys, crusader churches and castle ruins toward the Luxembourg border, and the South Eifel nature park's gorges within a short drive. Rome underfoot, beer on tap, borders soft: Bitburg refreshes on several levels.
